Hotel-Style Elegance: Crafting Uppuma like a Culinary Maestro



To prepare South Indian hotel-style uppuma, follow these steps:


  1. Ingredients:

  • Semolina (sooji or rava)

  • Water

  • Oil or ghee

  • Mustard seeds

  • Urad dal (black gram)

  • Chana dal (split chickpeas)

  • Cashews

  • Curry leaves

  • Green chilies

  • Ginger

  • Onion

  • Salt

  • Lemon juice (optional)

  1. Roasting Semolina:

  • In a pan, roast semolina until it turns golden brown. Set aside.

  1. Tempering:

  • Heat oil or ghee in a pan.

  • Add mustard seeds, urad dal, chana dal, cashews, curry leaves, green chilies, and chopped ginger.

  • Sauté until the dal turns golden.

  1. Adding Vegetables:

  • Add finely chopped onions and sauté until they become translucent.

  1. Cooking Semolina:

  • Pour water into the pan and bring it to a boil.

  • Gradually add the roasted semolina, stirring continuously to avoid lumps.

  1. Seasoning:

  • Add salt and mix well.

  • Optionally, squeeze some lemon juice for a tangy flavor.

  1. Simmering:

  • Cover the pan and simmer on low heat until the uppuma is cooked and reaches a fluffy consistency.

  1. Garnishing:

  • Garnish with chopped coriander leaves.

  1. Serve:

  • Uppuma is ready to be served hot. Enjoy it with coconut chutney or pickle.
