To prepare South Indian hotel-style uppuma, follow these steps:
Ingredients:
Semolina (sooji or rava)
Water
Oil or ghee
Mustard seeds
Urad dal (black gram)
Chana dal (split chickpeas)
Cashews
Curry leaves
Green chilies
Ginger
Onion
Salt
Lemon juice (optional)
Roasting Semolina:
In a pan, roast semolina until it turns golden brown. Set aside.
Tempering:
Heat oil or ghee in a pan.
Add mustard seeds, urad dal, chana dal, cashews, curry leaves, green chilies, and chopped ginger.
Sauté until the dal turns golden.
Adding Vegetables:
Add finely chopped onions and sauté until they become translucent.
Cooking Semolina:
Pour water into the pan and bring it to a boil.
Gradually add the roasted semolina, stirring continuously to avoid lumps.
Seasoning:
Add salt and mix well.
Optionally, squeeze some lemon juice for a tangy flavor.
Simmering:
Cover the pan and simmer on low heat until the uppuma is cooked and reaches a fluffy consistency.
Garnishing:
Garnish with chopped coriander leaves.
Serve:
Uppuma is ready to be served hot. Enjoy it with coconut chutney or pickle.
