Here is a step-by-step process for making Melukote Iyengar Puliyogare:
Prepare Puliyogare Gojju:
Grind together cumin seeds, coriander seeds, urad dal, pepper corns, red chilies, and sesame seeds for the spice mix.
In a pan, temper mustard seeds, chana dal, peanuts, and curry leaves. Add tamarind extract and jaggery, then mix in the ground spice mix.
Cook Rice:
Cook 2 cups of rice and let it cool.
Mix Puliyogare Gojju with Rice:
Once the rice is cool, mix it with the prepared Puliyogare Gojju. Ensure the rice is well-coated with the flavorful mixture.
Temper for Garnish:
In a small pan, heat oil and temper mustard seeds, urad dal, chana dal, peanuts, and curry leaves. Pour this tempering over the Puliyogare.
Serve:
